Easy Mexican Casserole Recipe

 

Ingredients:

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend, divided
  • 6 large flour tortillas (burrito size)
  • Optional toppings: diced tomatoes, sliced green onions, sliced black olives, sour cream, avocado, cilantro

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess grease.
  3. Add the diced onion and bell pepper to the skillet with the cooked ground beef. Cook for 3-4 minutes, until the vegetables are softened.
  4. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  5. Stir in the taco seasoning mix until well combined.
  6. Add the black beans, corn kernels, diced tomatoes with green chilies, and salsa to the skillet. Stir well to combine all the ingredients.
  7. Let the mixture simmer for 5-7 minutes, stirring occasionally, to allow the flavors to meld together.
  8. Remove the skillet from the heat and stir in 1 cup of shredded Mexican cheese blend until melted and well combined.
  9. To assemble the casserole, spread a thin layer of the beef and vegetable mixture evenly over the bottom of the prepared baking dish.
  10. Place two flour tortillas over the beef mixture, overlapping slightly if necessary to cover the bottom of the dish.
  11. Spread another layer of the beef and vegetable mixture over the tortillas.
  12. Sprinkle 1/2 cup of shredded Mexican cheese blend evenly over the beef mixture.
  13. Repeat the layering process with the remaining tortillas, beef mixture, and shredded cheese, finishing with a layer of cheese on top.
  14. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly.
  15. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and lightly golden brown.
  16. Remove the casserole from the oven and let it cool for a few minutes before slicing.
  17. Serve the Mexican casserole hot, garnished with your favorite toppings such as diced tomatoes, sliced green onions, sliced black olives, sour cream, avocado, and cilantro.
