Blueberry Baked Oatmeal

 

Ingredients:

– 2 cups old-fashioned rolled oats

– 1 teaspoon baking powder

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon salt

– 2 cups unsweetened almond milk or milk of choice

– 1/4 cup maple syrup or honey

– 2 tablespoons melted coconut oil or butter

– 1 large egg, beaten

– 1 teaspoon vanilla extract

– 1 and 1/2 cups fresh or frozen blueberries

– Optional toppings: additional blueberries, sliced almonds, drizzle of maple syrup

Directions:

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish with cooking spray or coconut oil.
  2. In a large mixing bowl, combine oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together almond milk, maple syrup or honey, melted coconut oil or butter, beaten egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Gently fold in the blueberries.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the oatmeal is set.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Serve warm with optional toppings, if desired.
