Healthy Peanut Butter Rice Crispy Treats

 

Ingredients:

– 4 cups crispy rice cereal

– 1/2 cup natural peanut butter

– 1/2 cup honey or maple syrup

– 1/4 cup coconut oil

– 1 teaspoon vanilla extract

– Pinch of salt

– 1/4 cup mini chocolate chips (optional)

– 1/4 cup chopped nuts (optional)

Directions:

  1. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, combine crispy rice cereal, peanut butter, honey or maple syrup, coconut oil, vanilla extract, and a pinch of salt. Stir until well combined.
  3. If using, fold in mini chocolate chips and chopped nuts until evenly distributed.
  4. Transfer the mixture to the prepared baking pan and press it down firmly into an even layer.
  5. Place the pan in the refrigerator and chill for at least 1 hour, or until the treats are firm.
  6. Once chilled, remove the treats from the pan using the parchment paper overhang and cut into squares or bars.
  7. Serve immediately, or store in an airtight container in the refrigerator for up to one week.
