Ingredients:

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 3 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

Directions:

  1. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  5. Divide the dough into two equal portions and shape each into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour, or until firm.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness.
  8. Use cookie cutters to cut out shapes from the dough and transfer them to the prepared baking sheets, leaving space between each cookie.
  9. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.
  10. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
