Chocolate Peanut Butter Oatmeal Bars

 

Ingredients:

– 1 cup creamy peanut butter

– 1/2 cup honey or maple syrup

– 2 cups rolled oats

– 1/2 cup chocolate chips

– 1/4 cup chopped nuts (optional)

– Pinch of salt

Directions:

  1. In a microwave-safe bowl or saucepan, combine creamy peanut butter and honey (or maple syrup). Heat in the microwave or on the stovetop until melted and smooth, stirring occasionally.
  2. In a large mixing bowl, combine rolled oats, chocolate chips, chopped nuts (if using), and a pinch of salt. Stir to combine.
  3. Pour the melted peanut butter mixture over the dry ingredients in the mixing bowl. Stir until everything is evenly coated.
  4. Transfer the mixture to a parchment-lined or greased 8×8-inch baking dish. Use a spatula to press the mixture firmly and evenly into the dish.
  5. Refrigerate the bars for at least 2 hours, or until firm and set.
  6. Once chilled, use a sharp knife to cut the mixture into bars.
  7. Store the Chocolate Peanut Butter Oatmeal Bars in an airtight container in the refrigerator for up to one week.
