Chicken quesadillas 

 

Ingredients:

  • 2 large flour tortillas
  • 1 cup cooked chicken, shredded or diced
  • 1 cup shredded cheese (such as cheddar, Monterey Jack, or a Mexican cheese blend)
  • 1/4 cup diced onions (optional)
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced tomatoes (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 teaspoon ground cumin (optional)
  • Salt and pepper to taste
  • Olive oil or cooking spray

Optional toppings:

  • Sour cream
  • Salsa
  • Guacamole
  • Sliced jalapeños
  • Chopped fresh cilantro
  • Lime wedges

Instructions:

Prepare the Chicken:

  1. If you don’t already have cooked chicken on hand, you can cook it specifically for this recipe. Season boneless, skinless chicken breasts or thighs with salt, pepper, and any other desired seasonings (such as chili powder, cumin, garlic powder, etc.). Cook the chicken in a skillet over medium heat until cooked through, then shred or dice it.

Assemble the Quesadillas:

  1. Place one flour tortilla on a clean work surface.
  2. Sprinkle half of the shredded cheese evenly over one half of the tortilla.
  3. Spread the cooked chicken evenly over the cheese.
  4. If using, sprinkle diced onions, bell peppers, tomatoes, cilantro, and ground cumin over the chicken.
  5. Sprinkle the remaining shredded cheese over the toppings.
  6. Fold the empty half of the tortilla over the filling to create a half-moon shape.

Cook the Quesadillas:

  1. Heat a large skillet or griddle over medium heat. Lightly grease the skillet with olive oil or cooking spray.
  2. Carefully transfer the assembled quesadilla to the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy and the cheese is melted.
  3. Repeat with the remaining tortilla and filling ingredients.

Serve:

  1. Once cooked, remove the quesadillas from the skillet and let them cool for a minute or two before slicing.
  2. Slice each quesadilla into wedges using a sharp knife or pizza cutter.
  3. Serve the quesadilla wedges hot with your choice of toppings, such as sour cream, salsa, guacamole, sliced jalapeños, chopped cilantro, and lime wedges.
