Shrimp scampi

Ingredients:

  • 1 pound (about 450g) large shrimp, peeled and deveined
  • Salt and black pepper, to taste
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1/4 cup white wine (such as dry white wine or chicken broth)
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • Cooked pasta or crusty bread, for serving
  • Lemon wedges, for garnish (optional)

Instructions:

Prepare the Shrimp:

  1. Pat the shrimp dry with paper towels and season them with salt and black pepper to taste.
  2. Cook the Shrimp:
  3. In a large skillet, heat the butter and olive oil over medium-high heat until the butter is melted and foamy.
  4. Add the minced garlic and red pepper flakes (if using) to the skillet, and sauté for about 1 minute, until fragrant.
  5. Add the seasoned shrimp to the skillet in a single layer. Cook the shrimp for 1-2 minutes per side, until they turn pink and opaque. Be careful not to overcook the shrimp, as they can become rubbery.

Deglaze the Pan:

  1. Pour the white wine (or chicken broth) and lemon juice into the skillet, stirring to deglaze the pan and loosen any browned bits from the bottom.
  2. Let the sauce simmer for about 2-3 minutes, until slightly reduced.

Finish and Serve:

  1. Stir in the chopped fresh parsley, and adjust the seasoning with salt and black pepper if needed.
  2. Remove the skillet from the heat.
  3. Serve the shrimp scampi hot over cooked pasta or with crusty bread to soak up the delicious sauce.
  4. Garnish with lemon wedges if desired.
  5. Enjoy your homemade shrimp scampi!
  6. This dish is quick and easy to prepare, making it perfect for busy weeknights or special occasions. The garlic-infused butter sauce pairs perfectly with the tender shrimp, creating a flavorful and satisfying meal.
