Raspberry lemon loaf 

 

Ingredients:

For the Loaf:

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (from about 2 lemons)
  • ½ cup sour cream or Greek yogurt
  • 1 cup fresh raspberries (you can also use frozen raspberries)

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, until well combined. Then, stir in the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream or Greek yogurt, and mixing until just combined. Be careful not to overmix.
  6. Gently fold in the raspberries, being careful not to crush them too much.
  7. Pour the batter into the prepared loaf pan, spreading it out evenly.
  8. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the loaf is baking, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth. Adjust the consistency by adding more lemon juice if too thick, or more powdered sugar if too thin.
  10. Once the loaf is baked, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack set over a baking sheet.
  11. While the loaf is still warm, drizzle the lemon glaze over the top, allowing it to drip down the sides.
  12. Allow the loaf to cool completely before slicing and serving.
