Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the crème brûlée topping:

  • 1/2 cup granulated sugar
  • Additional granulated sugar for caramelizing

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter for the crust. Press the mixture into the bottom of the prepared springform pan to form an even layer.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until smooth.
  5. Pour the cheesecake batter over the prepared crust in the springform pan.
  6. Place the springform pan on a baking sheet and transfer it to the preheated oven.
  7. Bake the cheesecake for 45-50 minutes, or until the edges are set but the center is still slightly jiggly.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight to chill and set.
  9. Before serving, prepare the crème brûlée topping. Sprinkle an even layer of granulated sugar over the top of the chilled cheesecake.
  10. Use a kitchen torch to caramelize the sugar until it forms a golden brown crust. Alternatively, you can place the cheesecake under the broiler for a few minutes to caramelize the sugar, but be sure to watch it closely to prevent burning.
  11. Once the sugar is caramelized, remove the cheesecake from the springform pan and transfer it to a serving platter.
