“Marry Me Chicken”

 

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions:

  1. Season the chicken breasts on both sides with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and red pepper flakes (if using). Cook for about 1 minute, until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in the heavy cream and sun-dried tomatoes. Let the sauce simmer for 2-3 minutes, until slightly thickened.
  6. Return the chicken breasts to the skillet and spoon some of the sauce over the top.
  7. Sprinkle the grated Parmesan cheese over the chicken breasts and sauce.
  8. Cover the skillet and cook for an additional 2-3 minutes, or until the cheese is melted and the sauce is bubbly.
  9. Garnish with chopped fresh parsley before serving.
  10. Serve the Marry Me Chicken hot, with additional sauce spooned over the top if desired.
