creamy Peanut Butter Pie

 

Ingredients:

For the crust:

  • 200g (about 1 1/2 cups) graham crackers, crushed into fine crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

For the filling:

  • 1 cup creamy peanut butter
  • 225g (8 oz) cream cheese, softened
  • 1 cup powdered sugar (confectioners’ sugar)
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold

For the topping (optional):

  • Whipped cream
  • Crushed peanuts or chocolate shavings

Instructions:

  1. Preheat your oven to 175°C (350°F).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.
  3. Press the crumb mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Use the back of a spoon or a flat-bottomed glass to help pack the crust tightly.
  4. Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and allow to cool completely.
  5. In a large bowl, beat together the peanut butter, softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the peanut butter mixture until fully incorporated and smooth.
  8. Pour the peanut butter filling into the cooled crust and spread it out evenly.
  9. Refrigerate the pie for at least 4 hours, or until set.
  10. Before serving, you can optionally top the pie with whipped cream and sprinkle with crushed peanuts or chocolate shavings for decoration.
