Pineapple Chicken and Rice 

 

Ingredients:

  • 1 lb (about 450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice (from the canned pineapple, if using)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • Cooked rice, for serving
  • Chopped green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions:

  1. Season the chicken pieces with salt and pepper to taste.
  2. In a large skillet or wok, heat the olive oil over medium-high heat. Add the seasoned chicken to the skillet and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened, about 3-4 minutes.
  4. Stir in the pineapple chunks (and their juice if using canned pineapple) and cook for another 2 minutes.
  5. In a small bowl, whisk together the soy sauce, pineapple juice, brown sugar, rice vinegar, and cornstarch until smooth.
  6. Pour the sauce mixture into the skillet with the vegetables and pineapple. Cook, stirring constantly, until the sauce thickens slightly, about 2-3 minutes.
  7. Return the cooked chicken to the skillet and stir until everything is well coated in the sauce.
  8. Serve the pineapple chicken over cooked rice.
  9. Garnish with chopped green onions and sesame seeds, if desired.
