Corn nuggets

Ingredients:

  • 2 cups frozen corn kernels, thawed
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions or chives
  • 1 large egg
  • 1/4 cup milk
  • Vegetable oil, for frying
  • Ranch dressing or your favorite dipping sauce, for serving

Instructions:

  1. In a large mixing bowl, combine the thawed corn kernels, all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, onion powder, shredded cheddar cheese, and chopped green onions or chives. Mix until well combined.
  2. In a small bowl, whisk together the egg and milk until smooth.
  3. Pour the egg mixture into the dry ingredients and stir until a thick batter forms. If the batter seems too dry, you can add a little more milk, one tablespoon at a time, until the desired consistency is reached.
  4. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
  5. Using a spoon or a small ice cream scoop, drop spoonfuls of the corn batter into the hot oil, making sure not to overcrowd the pan. You may need to fry the nuggets in batches.
  6. Fry the corn nuggets for 2-3 minutes, or until they are golden brown and crispy on the outside, and the inside is cooked through.
  7. Use a slotted spoon to transfer the fried corn nuggets to a plate lined with paper towels to drain any excess oil.
  8. Repeat the frying process with the remaining batter until all the corn nuggets are cooked.
  9. Serve the corn nuggets hot, with ranch dressing or your favorite dipping sauce on the side.
  10. Enjoy your homemade corn nuggets as a delicious snack or side dish!
  11. These homemade corn nuggets are crispy on the outside, soft and flavorful on the inside, and perfect for dipping. They’re sure to be a hit with family and friends!
