French Onion Mac & Cheese 

 

Ingredients:

  • 8 ounces elbow macaroni
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon sugar (optional)
  • 1 teaspoon thyme (optional)
  • 1 cup breadcrumbs

Instructions:

  1. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-25 minutes. Stir occasionally. If desired, add sugar during the cooking process to help with caramelization.
  3. Preheat your oven to 375°F (190°C).
  4. In a separate saucepan, melt the butter over medium heat. Once melted, stir in the flour to create a roux. Cook for 1-2 minutes, stirring constantly.
  5. Gradually pour in the milk, whisking constantly to avoid lumps. Cook until the mixture thickens, about 5-7 minutes.
  6. Stir in the shredded Gruyère and mozzarella cheese until melted and smooth. Season with salt and pepper to taste.
  7. Add the cooked macaroni to the cheese sauce and stir until well combined.
  8. Fold in the caramelized onions and thyme (if using).
  9. Transfer the macaroni and cheese mixture to a greased baking dish.
  10. In a small skillet, melt a tablespoon of butter over medium heat. Add breadcrumbs and toast until golden brown, about 3-4 minutes.
  11. Sprinkle the toasted breadcrumbs over the macaroni and cheese.
  12. Bake in the preheated oven for 20-25 minutes or until bubbly and golden brown on top.
