7-Up cake

Ingredients:

For the Cake:

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3/4 cup 7-Up (or any lemon-lime soda)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon (optional)

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons 7-Up (or lemon-lime soda)

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (160°C). Grease and flour a 10-inch bundt pan or tube pan.

Make the Cake Batter:

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the eggs, one at a time, beating well after each addition.
  3. In a separate bowl, whisk together the flour, salt, and baking powder.
  4. Gradually add the dry ingredients to the creamed mixture, alternating with the 7-Up, beginning and ending with the flour mixture.
  5. Stir in the vanilla extract and lemon zest (if using) until well combined.

Bake the Cake:

  1. Pour the batter into the prepared bundt pan, spreading it out evenly.
  2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Make the Glaze:

  1. In a small bowl, whisk together the powdered sugar and 7-Up until smooth. Add more 7-Up if needed to reach your desired consistency.

Glaze the Cake:

  1. Once the cake has cooled completely, drizzle the glaze over the top of the cake, allowing it to drip down the sides.
  2. Let the glaze set for a few minutes before slicing and serving.

Serve:

  1. Slice and serve the 7-Up cake as desired.
  2. Store any leftovers in an airtight container at room temperature for up to 3 days.
  3. Enjoy your delicious homemade 7-Up cake with its unique lemon-lime flavor! It’s a perfect dessert for any occasion, and sure to be a hit with family and friends.
